In reaching its conclusion that the employer has the burden to prove the reasonable factors other than age defense the Supreme Court looked at another provision of the ADEA the bona fide occupational qualification defense. At the trial a jury found Knolls had violated the ADEA because its layoff procedure had a disparate impact based on age. In Meacham Knolls Atomic Power Laboratory was planning to lay off a number of employees. Specifically the jury found that although the plaintiffs did not prove that Knolls intentionally discriminated against them they did prove that Knolls method of deciding who to lay off disproportionately harmed older workers. The BFOQ defense states that it is not unlawful for an employer to take adverse employment actions otherwise prohibited by the ADEA where age is a bona fide occupational qualification reasonably necessary to the normal operation of the particular business. As long as the adverse action is based on reasonable factors other than age. Restaurant Supply a Lifesaver for Caterer

A few years ago, I was working as a catering manager of a local historic hotel. The hotel had been in terrible condition for many years until a group of investors purchased it and began the long arduous process of renovation. They were able to get the majority of it renovated before the funding started to run out, at which time they opened for business to offset some of the costs of ownership. As a result, all of the rooms, lobby and ballroom were completely renovated, while the restaurant was still in a sorry state. Since the ballroom was booked for events, I was hired to cater, using the kitchen in its un-renovated condition. The kitchen could handle an event every week, but wasn’t ready for the business a new restaurant would bring. So, I took the job, set up shop in the kitchen and began catering every event that came through.

Shortly after the hotel reopened, things started getting very busy. In addition to being full most of the time, people were booking events right and left. I was soon catering two or more events a week, with a schedule booked months in advance. What had started as a part time job was quickly turning into double overtime. They even expanded my floor staff and hired two full time assistants for the food preparation work, which I normally handled myself.

Then, inevitably, the investors who owned the hotel decided it was time to renovate the restaurant. I was quickly told that I wouldn’t be needed anymore. They would use an outside caterer who could bring food in. I really didn’t want the business to end, and while commiserating over its inevitable demise with one of my staff members, he suggested I contact a restaurant supply company just to see what it would cost to set up shop on my own.

This turned out to be one of the smartest moves I’ve ever made. OK, I confess, I was that Sally - and more than once too.
But now I’ve learned three key secrets for choosing flowers
for my table centerpieces. Now I can add beauty to my dinner
parties and subtract frustration and stress from my day.

Here are the three key secrets.

1)Less choice means less stress. Eliminate impractical
choices. That means you shouldn’t choose tall flowers or
flowers that are scented for your table centerpiece.

Your flower arrangement should not be more than about 5
inches high. Otherwise your guests have to peer through the
floral bushes to see each other across the table.

So you can eliminate tall flowers unless you can cut them
down. Now you won’t be swayed by a beautiful but impractical
purchase. Sally’s tall orchids were stunning, but they
didn’t cut it for a sit-down dinner table arrangement.

Scented flowers are appealing, but not at the dinner table.
Don’t put highly scented flowers on the dinner table because
their aroma can fight with the food aromas. Some guests may
even be allergic to the strong scent as well. The scented
hyacinths Sally was eyeing would not be good choices for the
dinner table.

Now you can eliminate a large range of flowers before you
even get to the store.

Remember, less choice means less stress.

2)White works with everything.
White tablecloths work with
every color of flower.

White taper candles work with every color of flower.

White or crystal candlesticks work with any color of flower.

And white flowers go with everything.

How easy could that be?

3)Decide on your color before you go shopping
If you do want some color in your flowers, you already know
that any color will go because of your white tablecloth and
your white candles.

If you want color, select your color choices BEFORE you go
shopping. Don’t come home with a color that is lovely but
doesn’t work with your scheme. Making a color plan will
really help you avoid stress at the flower shop.

If your first color choice isn’t available
when you get there, go to your second choice.

If you see some flowers you absolutely have to have, but
they aren’t one of your choices, don’t change your whole
plan for the dining room table centerpiece. Just buy those
must-have flowers to decorate your living room. Then go back
to the plan and select one of your color choices for the
dining room table.

So don’t be like Sally. Put the three key flower-choosing
secrets to work for you:

Chinese Cooking Utensils

There are quite a few traditional utensils that have been used in cooking for thousands of years in China. Some of them are still seen in most of families, some can only be seen in rural areas, or may be disappearing in the modern world. But to cook authentic Chinese food that always tastes like grandma’s, some of the utensils simply cannot be replaced by what you see in American stores.

Chinese Wok

Deep pan with round bottom used in several ways. Comes in iron, stainless and stainless with layer of copper on the bottom. Iron heats most evenly, but should be seasoned before using or food will stick.

To season: Fill pan with water. Add soap and soda and bring to boil. Pour off water, wipe dry. Place pan over strong heat. Add oil and rotate till pan is coated. Pour off excess oil. Place pan over weak fire and wipe with dry cloth.

To clean: After using pan, wash while still hot. Wipe and place over heat to dry completely.

Knife

Heavy and wide. All purpose - for paring, cutting, slicing, chopping and carving.

Iron Palette

Comes in square or round front. Rounded ones are easier to use with Chinese wok. Use for frying, sautéing and basting.

Iron Spoon

Use back side for mixing food with minimum breakage.

Steamer

Used for steaming buns, chicken, meat, fish. Place over Chinese wok filled with boiling water. Buy one size smaller than wok. There are new styles of steamers on the market made of different materials. But Chinese believe that the traditional steamer works the best.

Slotted Spoon

Used for deep frying and boiling to get rid of excess oil or water.

Wire Sieve

With handle. Used for boiling noodles, dumplings, etc.

Steamers for Pastries

Small in size - about 15cm (6″) in diameter. Used in same method as large steamer. Serve hot pastries in steamers. Typical foods served are small meat buns (small steamer meat buns, or Xiao Long Bao Zi), steamed meat dumplings (Shao Mai), etc.

Moulds for cookies

Made from wood with various carved designs. No longer popular in the modern society since people tend to buy cookies off the shelf. Some may still use the moulds for major holidays, or just Chinese New Year.

Bamboo Brush

Used for washing hot wok. Guess only people in some rural areas still use this type of brush. More people use regular washing cloth found on market.

Rolling Pin

Used for preparing noodles, dumpling skins, Chinese pancakes, and more. With the busy daily life nowadays, most of time people choose to buy ready to cook fresh noodles and dumpling skins from the small vendors seen on the street to save us time. Choose ones made from sturdy wood.

Build Your Own Wine Rack (In An Afternoon)

A good drink is what even Gods enjoy and to most a good wine is the best drink in the world. The connoisseurs of wine say that to find out a good wine is to smell and taste it. Not is the case with the wine racks. It is much harder a task than that for you get to know the insulation, humidity and temperature that your wine needs besides the ambience that your wine drinker needs and lot other things.

Because of the specific requirements of the wines in terms of the humidity, etc the wine racks can be only few types in the texture although they may vary in terms of the design, the space they tae and the number of wine bottles they can hold.

For building your own wine rack the first thing that you should be sure of is that whether your walls have sufficient insulation otherwise you will lose nearly all of your good wine. A good insulation ranges from R11 to R19 depending the outer temperature, as basement cellars may need more insulation. After having an optimum insulation the next thing you should consider for building your own rack is the material. The options available are redwood, lattice, country pine and mahogany. Redwood offers a soothing look to the bar while the country pine allows an artistic environment. You can also have metal ones but they require extra care and not much can be offered in terms of designs.

For each bottle there should be a 4 to 6 inch breathing space that will help in not only easy accessibility but also for cleaning purposes. You shouldn’t forget to keep the width of the rack at least 2 inch more than the length of the wine bottle although we advise around 15 inch for a single racking. There are many designs and most of them in different geometrical patterns but the best out of them is the rectangular one which is quite safe.

If you are thinking over some color, although it all depends upon the color of the walls and other surroundings, we recommend the dark ones. They give a more romantic and elegant look. Redwood and the mahogany generally do not need to be painted.

There are certain precautions that need to be considered. There should be no electrical installations where you are preparing to have your wine rack. The lighting system at the ceiling is called the can lighting and it should be around 15 inch from the wall for a single deep racking and around 28 to 30 inch for double deep racking. The doors and the windows of the bar should be properly installed so that they maintain insulation of inside from outside. The rack should not interfere with the door, window or any type of switch.

Besides the above ones there are certain racks called as counter top racks meant for a few bottles ranging from 1 to 12 and generally they are suited for a small gathering and are best kept on a table. Similarly there are certain racks which are rightly called hanging racks for they hang to the ceiling or the wall and they serve the purpose of both a show piece and a functional small rack.

Blended and Varietal Wines

Novice wine lovers soon come across the concept of blended and varietal wines. The two questions that spring to mind are, “what does it mean?” and “does it matter?”

At the basic level, the difference is quite simple. Varietal wines are made from a single grape variety, while blended wines are made using two or more. The most obvious example is the difference between the two great red wine styles of France. Burgundy red wine is composed of the single variety Pinot noir. Bordeaux red wines are most often blends of up to five varieties, Cabernet sauvignon, Cabernet franc, Merlot, Malbec and Petit verdot. There are a few Bordeaux wines made from a single variety, but they are the exceptions that prove the rule.

So much for theory. The distinction between varietal and blended wines is less clear in practice. Many varietal wines are made from blends of wine grown in several regions. Australia’s iconic Grange is such an example. Each year hundreds of samples from many vineyards are tasted and evaluated before the final blend is decided upon. The result is a blend of regions, rather than varieties.

Many more modest Australian wines with lesser claims to fame are also regional blends. The process of selecting the blend is similar but much more simplified. The clue on the label is often the words “wine of South Eastern Australia”. This is almost as general a statement that you can get about the origins of an Australian wine.

Some wines made from a single variety are blends of several different vintages, but this is quite rare for table wines.

While on the topic of labels, you should be aware that many wines bearing a single varietal name can legally contain up to fifteen percent of other varieties. If the wine is labelled as a blend, then the variety with the largest percentage composition should be named first, for example wine labelled Cabernet Merlot, should contain a greater percentage of Cabernet than of Merlot.

Our second question is “does it matter?” Well, if you find a wine that you enjoy and it is a blend, then you should continue to drink it.

However if you wish to extend your wine knowledge and thus enhance your wine experience you should try varietal wines whenever possible. There are hundreds of varietal wines available, each with a special subtle difference waiting for you to discover.
